Swedish born Roger Olsson has joined The Principal London as Executive Chef to develop the food offering in each of our outlets. His emphasis is on taking excellent ingredients and using a mix of modern and traditional techniques he says he wants to “produce dishes which keep both guests and Chefs excited”.

Roger has experience in some of the most established kitchens in London, including The Ritz as Executive Sous Chef, Michelin Starred Pied a Terre as Sous Chef and most recently as Executive Sous Chef at The Dorchester. Alongside Roger is Executive Sous Chef, Chris Branscombe-Ling and Executive Pastry Chef, Ryan Thompson, together they are looking to build a strong, well skilled team who are passionate about food and looking to develop professionally and work hard within a well-structured, well equipped, brand new kitchen.

Night Chef

As our Night Chef your duties will include:

* To be fully conversant with all menus with regard to the particular items relating to your designated area

* To be responsible for the production of food within your designated section

* To ensure that food preparation is of the highest standard at all times

* To ensure that portion control is maintained in accordance with company guidelines

* Provide on the job training for all team members

* Get involved with dish designs and menu planning

* Manage staffing levels and brigade rota

As our Night Chef – Palm Court you will:

* Have a proven track record within a luxury hotel

* Have a true passion for brilliant food

* Be distinctive, confident and efficient

* Intuitive and professional with great organisational skills and time management

* Energetic with a passion to do a great job

* Can do attitude with natural leadership and motivational skills

* Pre-opening experience would be a bonus
