TITLE: Lounge Bar Manager

REPORTING TO: Hotel Manger

RESPONSIBLE FOR: The smooth running of the Lounge Bar and associated Bars within Conference & Banqueting. All Liquor stocks within the hotel

MAIN PURPOSE OF JOB:

Ensure the serving of Food &Beverage to Company and hotel standard in the Lounge bar plus the service of Liquor in Lancaster or Harrier Bars. To ensure that all Liquor is served to Licensing regulations

KEY ACCOUNTABILITIES:

  • Ensure orders of food and beverage are served promptly in accordance with hotel standards.
  • To ensure all stock levels for food and beverage are held at the required level and that adequate mis-en-place is available for each shift in the bar.
  • To ensure liquor control is strictly maintained at all times and all ullage, transfers and requisitions are correctly completed as per hotel standards.
  • To ensure that the team are fully conversant with Micros and supervise the collection of all monies and ensure that all guest bills are posted correctly.
  • To produce and ensure that the team work to an agreed rigid cleaning procedure.
  • To ensure the team adheres to the correct opening times and that procedures are followed.
  • To ensure the Bar area is maintained to the highest standards of cleanliness and tidiness.
  • Ensure that the team act upon all up selling opportunities within the Bars through encouragement and incentivising.
  • To ensure that all standards relating to security are maintained with emphasis on the following:
    Liquor Stocks;
    Hotel Equipment;
    Bar Keys;
    Bar Floats;
    Bar Glasses.
  • Establish and maintain strict security procedures within your department, reporting any potential risks to the Hotel Manager.
  • Display a pro-active and consistent approach to stock control, cost control and cash control.
  • To ensure all staff have locked in and out and these are approved on time to Time and attendance system for end of month payroll
  • Accurately assess the needs of the business in terms of staffing etc. providing solutions to identified risks in line with trading levels.
  • To ensure each new member of the team receives a departmental induction within their first week and attends a company orientation within their first four weeks with the company.
  • To carry out Objective setting/job chats as per the company appraisals system.
  • To adhere to Company Disciplinary & Grievance procedures at all times.
  • To attend and contribute to all daily/weekly team meetings.
  • To carry out Duty Management shifts as required
  • To ensure self and team have a thorough knowledge of and adherence to the law with regard to the following company regulations:
    Licensing Laws
    Health and Safety Regulations;
    Food Handling & Hygiene Laws; Fire Regulations and Procedures;
    First Aid Procedures.
  • To undertake any other duties requested by management.

ADDITIONAL RESPONSIBILIES

  • To report all maintenance faults to relevant department in a timely manner
  • To ensure staff are presented in the correct uniform to standard at all times
