Under the general guidance of the Operations Manager provide the highest food quality consistend with cost control and profitability margins of the hotel’s kitchen to maximise guest satisfaction, produce healthy food for the hotel teams and food profitability by managing the food production in the kitchen. Also, the Head Chef will be required to train and develop the kitchen brigade.

Job role responsibilities below:

* Analyzing departmental expenditures, wages, GP% against business performance to identify areas in which reductions can be made to ensure cost effectiveness and accurate forecast are submitted to meet budget.
* To direct all activities of the kitchens to maintain and improve productivity, food quality and service in accordance with the hotel’s budget and business goals
* To ensure that the company Brand Standards are observed, trained, focused and assessed throughout the year
* To perform all tasks to a consistent and correct standard as per manual and recipes. To ensure standardized recipes are in place and constantly up-dated. To ensure a complete knowledge by all staff and yourself of these recipes and that they are served to the correct standards.
* To prepare and develop new Menus for the banqueting, room service, coffee shop, restaurant and Bar as required and discuss these with the F&B Manager, ensuring all items are costed prior to implanting them.
* Assist in the setting and achieving the Kitchen budget. This will be achieved by having comprehensive understanding of the department P&L, payroll and supplier costs. All over spends will need to be justified coherently to the Operations Manager with tangible evidence as to why this over spend took place.

* To liaise daily with the restaurant manager in charge to discuss specials and food availability.
* Ensure food quality and substance in the staff restaurant is health and nutritious to support well being of all team members.
* To have an active role in the promotion of Learning and Development in the department, to support Coach and Inspirator initiatives, ensuring training activities are carried out and recorded
* Identify top performers and team members with the greatest potential and ensure that they have a targeted development plan to combine with succession planning, with the aim of having them ready for the next stage of their development when the opportunity arises
* Set and agree departmental objectives in line with hotel objectives and balance scorecard, and communicate these through the 90 day plans, ensuring all targets are met within the agreed timescales
