Rosewood Miramar Beach is looking for an Executive Steward to support and direct our Stewarding Team!

Overview

Assist the Executive Chef in the running of the commissary kitchen, contributing to the overall success of outlets and events, in accordance with the hotel’s standards and financial goals. Responsible for the management of all aspects of the Banquet Department functions, in accordance with hotel standards. Directs, implements, and maintains a service and management philosophy that serves as a guide to respective staff.

Essential Responsibilities

* Maintain complete knowledge of and comply with all departmental policies, service procedures, and standards.

* Ensures that work areas and pieces of equipment are hygienically clean and in order and that supplies are on hand with proper control, to ensure efficient service.

* Conducts bi-monthly inventory of operating equipment’s in all outlets to ensure control of breakage & losses.

* Initiates requisition for cleaning materials and other supplies to the minimum to prevent wastage & misuse.

* Schedules daily, weekly, & periodically cleaning of food production outlets and pieces of equipment.

* Ensures that proper hygiene & sanitation is observed in all areas including the associates’ cafeteria.

* Monitors the consumption of chemicals in all machines & wash-up areas.

* To have a complete understanding of and adhere to the company’s policy relating to fire, hygiene, and safety

* To maintain a high standard of personal appearance and hygiene at all times.

* To evaluate the performance of individual Stewarding personnel base on the quality

* Exercises administrative supervision over all stewarding personnel that includes personnel requisition, promotion, granting of disciplinary action, training, rosters, and overtime requests.

* To have a complete document of all stewarding activities such as:

* Daily Hygiene checklist/ Assured Safe Catering

* Training records

* F&B operating equipment records

* Pending Maintenance Records

* Ensures low breakage and proper maintenance of all pieces of equipment by facilitating appropriate training.

* Controls the release of pieces of equipment to banquets for outside catering.

* Overseas the proper maintenance of all dishwashing machines in his areas.

* Set auditing & inspection schedules of F&B areas & coordinate with the Engineering department to ensure proper maintenance of all machinery & food processing equipment’s.

* Communicates effectively with guest, immediate superior, business partners, and associates

* Participates in community project or activities in order to promote the hotel’s image and cooperation to improve community relationship

* To be a good salesperson to promote hotel’s image and business

* Participates in all activities related to Municipality Food Hygiene meeting, Assured Safe Catering Programme, etc.

* To evaluate objectively the performance of individual stewarding personnel

* Coach and counsels all steward personnel when applicable

* Motivates employees to grow within the hotel and to be better managed

* To provides the most effective training to all stewarding personnel

* Directs and supervises activities of the steward personnel in the operation, redeploying employees as necessary to maximize productivity.

* Coordinates closely with the Executive Chef on special cleaning schedules.

* Coordinate closely with F&B Director on the scheduling of the Operating equipment Inventory

* Maintain good working relationships with colleagues and all other departments

* To work with all stewarding personnel to maximize employee morale and productivity
