As
a Demi Chef De Partie in the kitchen it is my job to support the Sous Chefs and
assist the Chef de Partie.

As
a Demi Chef De Partie I need to be flexible and be able to cover all of the
sections in the kitchen. This includes breakfast, in room dining, banqueting,
night shifts and Lounge Bar.

When
on one particular section it is my responsibility to ensure all temperatures
are being recorded. Write up an MEP list and to do an order. When working with junior chefs it is my job
to distribute the jobs and ensure that everything gets done.

Other
shifts may involve working in the Pastry Department, looking after the
afternoon tea preparations, where we will prepare and decorate the afternoon
tea pastries. We also make the scones, curd and seasonal jams. This section
gives us a real opportunity to use out artistic skill as there is a lot of
freedom to try new skills and techniques.

Banqueting
is a large part of our business at the W London Leicester Square Hotel, there are varying sizes in
the banquet rooms here, so we cater for lots of different styles of banquets –
breakfast functions, plated desserts, buffets, afternoon tea breaks, Lunch,
Dinner etc.

I
also have regular meetings with the Head Chef. He will tell me any updates that
I am unaware of and I will keep him informed on my progress with everything I’m
working on.

The
job is very exciting and if you like to learn a lot then this job is
perfect! The hours are as required and
vary from 8-10 hours 5 days a week.
