Required Skills and Responsibilities

* To supervise the day-to-day functions of all bar employees, facilities sales and costs.

* Supervise coordinate and direct prompt, efficient and courteous service of food and beverage in the outlet.

* Conduct under the guidance of the Restaurant Manager, your staff member’s orientation, on the job performance appraisal, coaching and counselling to ensure appropriate productivity.

* Take briefings and liaise with the kitchen accordingly.

* Participate in service as necessary in accordance with the requirements and practices of your outlet.

* Control stocks for the daily use in the outlet and to ensure service requirements are met.

* Take care of reservations and private parties.

* To be fully responsible of the outlet’s operation, service and all related requirements.

* To achieve maximum turnover per day without sacrificing service quality standards.

* To have thorough knowledge of the micros machine and know how to operate it.

* Communicate with the Director of F&B, Asst. Director of F&B, Chief Steward and all service staff.

* To control all the par-stock levels.

* Responsible for monthly inventory and collect breakages on time.

* Motivate the staff to achieve daily and monthly budget by using notice boards and informing the staff during outlet briefings.

* Ensure an adequate mise en place of condiments, crockery, cutlery, glasses, linen, stationary, tobacco and other sundry items in accordance to par stock.

* Check all requisitions for food and beverage and guest supplies and to keep them at the established par-stock level.

* Attend the daily F&B Briefing and do the Bar briefing on a daily basis.

* Check menus on daily basis for signs of damage like ink stains and make sure they are presentable to the guests at all times.

* Ensure a daily stock taking of all beverages is carried out.

* Approve complimentary items of designated F&B outlets.

* Ensure maximum security and control of the billing in accordance with the Hotel’s Policy and Procedures.

* Personally check that, bills are correct and complete.

* Ensure all VIPs are identified in your outlet as per the VIP list. To extend every courtesy to these clients.

* Ensure long staying guests are identified and met in your outlet.

* Ensure that piped in music is kept at an appropriate level at all times.

* To ensure that reusable beverage is not wasted.

* Keep a record of absenteeism, public holidays and days owed and submit to the F&B Office on the last day of every month.

* To maintain a high standard of hygiene and cleanliness in both the front & back of house at all times.

* To be responsible for all equipment.

* Ensure staffs are aware of the daily functions and promotions.

* Ensure staffs are aware of the opening and closing times of all food & beverage outlets.

* Ensure pouring brands are used whenever the guest does not specify the brand.

* Whenever staffs is roistered for overtime in Banqueting, to ensure that each one is aware of their scheduled timings

* Record all incidents in the logbook, i.e. complaints, comments, etc.

* Ensure that all staff have access to the SOP manual and have been thoroughly briefed and trained on its contents.

* Solicit comments and suggestions from guests for possible improvements in F&B service.

* Ensure you personally deal with the host and ensure perfect service is given to them at all times.

* Monitor the quality and quantity of all food & beverage items served

* Anticipate the volume of business, taking into consideration the occupancy of the hotel, holidays, the weather and other activities in the hotel.

* To be actively involved in promotional activities in order to achieve increased awareness & covers.

Languages: English and Portuguese

Education: Bachelor'd degree
