Rosewood Hotel Georgia is looking for a Banquet Chef/Sous Chef.

As a Banquet Chef/Sous Chef, you will be responsible for all aspects of managing the banquet and kitchen personnel, ensuring the quality preparation of all event menu items and proper handling/storage of all food items in accordance with set standards. Coordinates the purchase of all food products and develops menus, maintaining the set approved food and labor costs.

Key Responsibilities:

* Responsible for the planning of banqueting menu’s, ensuring they are up to date with new trends, sustainability, and seasonal changes.

* Possesses the ability to handle menus ranging from breakfasts to lunches, limited service to formal dinners with multi course plated meals.

* Meets with potential clients with sales team representative to discuss all menu options. Including developing menus based on client’s contract requirements

* Monitors the quality of banquet product prior and during events and evaluates client’s satisfaction.

* Ensure proper amount of culinary associates are scheduled to properly execute each event while keeping labour in line as dictated.

* Takes physical inventory of specified food items for daily inventory. Communicate additions/ changes to orders/ invoices as they arise.

* Meet with the Chief Steward to review equipment needs, banquet plate up assistance, cleaning schedule/project status, health/safety and sanitation follow up ensuring that recipe cards, production schedule, plating guides, photographs are current and posted and that all staff prepares menu items following recipes and yield guides, according to department standards.

* As a working Chef are required to work on In Room Dinning and hotel Outlets cooking lines as required during service and assist wherever needed ensuring to always exhibit a friendly, positive, helpful and courteous manner when dealing with fellow employees and/or guests.

* Assist Head Chef with In Room Dinning and Outlets operations daily as required.

* Maintain complete knowledge of and comply with all departmental policies, service procedures and set standards as well ensuring associates compliance with all departmental/hotel policies and procedures.

* Coordinate with Head Chef to review schedules, assignments, anticipated business levels, changes and other information pertinent to job performance.

* Continuously look for ways to save the facility of money while still providing quality products and service for all guests.

* Participate in associate evaluations and disciplinary actions.

* Ensures that all standards of safety are strictly observed while supervising associates.

* Other duties, responsibilities and projects as assigned.
