Being a Memory Maker as a 1st Commis Chef
In this role, you will become part of the Edwardian family and work within Food Production in The May Fair
A 1st Commis Chef will have progression in skills and knowledge from being a Commis Chef and show early signs of potentially running a section.
Duties and Responsibilities
Assists with all hot and cold food preparation, including banquets when necessary
Aids with the preparation of sauces, soups and hot entrees for service and special functions, insuring that all stations are set for forecasted covers
Demonstrates basic recipe knowledge for soups, sauces and entrees, making suggestions to improve quality and eliminate waste
Helps to ensure that all kitchen personnel and servers are aware of specials, plate presentations and prices
Helps to organise and maintain work areas, coolers and storage areas
Prepares work checklist and organises work stations for each shift
Assists personnel in checking coolers and storage areas for cleanliness, quantity and quality of food products
Ensures that proper plate presentation and requisitioning procedures are followed
Can perform all duties of Commis Chef as specified in Commis Chef Job description
Can carry out a single dedicated task efficiently and with minimal supervision
Communicates requests from restaurant and other staff to the Kitchen Team Leader
Understands the structure and working relationships of the kitchen brigade as a team
Have food product knowledge, and an understanding of food preparation techniques
Has good command of the English language
Has knowledge of Edwardian Hotels London systems and procedures
Holds a level 2 Food and Hygiene certificate
